Hooray For The Weekend

Got any plans for the weekend?  We're off to the seaside to visit "Grandma Seaside", aka Meyric's mum, and despite there still being a chill in the air I'm really looking forward to walking along the seafront and getting a good dose of fresh air.  I love the feeling of space and openness by the sea, and I always come back feeling refreshed even if the skies have been grey.

How cool are these leg warmers from OeufNYC! I wish I could get Tabitha a pair, they'd be perfect for staying cosy on this weekend's blustery trip to the seaside!  



I recently stumbled across this quick and easy recipe for 1-Minute Berry Ice Cream from Jamie Oliver and I can't stop thinking about making it and, more importantly, eating it!  Would be so easy to make with little ones and is packed with fruit too.. yum!

Ingredients

500g of mixed frozen berries
150g of fresh blueberries
3-4 tablespoons runny honey
500g tub of natural yoghurt (or greek yoghurt)
A few sprigs of fresh mint
Optional - 4 small ice cream cornets

Method

(In advance) Put 4 small glasses into the freezer, or you can serve straight into ice cream cornets, if you prefer.

When you're all set up and ready to go, get the glasses (if using) and the frozen berries out of the freezer.  Divide the fresh blueberries between the glasses.  Put the honey and the yoghurt and leaves from the sprigs of mint into a food processor and whiz, then add the frozen berries and whiz again until combined. Spoon the frozen yoghurt over the fresh berries and serve!
